Corn Meal Recipes
OVEN SKILLET CORN BREAD
1 cup palmetto farms cornmeal
1/2 cup self rising flour
2 tablespoons sugar
3 teaspoons baking powder
1 teaspoons salt
1 egg
1/4 cup oil
1 cup milk
Preheat oven to 375.
Combine ingredients and pour into well greased 9 inch cast iron skillet. Bake approx. 20 minutes or until golden brown. For a crunchier texture preheat well greased skillet in oven as it warms to baking temperature. This recipe can be used for muffins or corn stick. Adjust cooking time.
Skillet Cheddar Bacon Cornbread
Prep Time: 10 min.
Cooking Time: 20 - 30 minutes
Ingredients:
2 cups Palmetto Farms Skillet Cornbread and Muffin mix http://palmettofarms.com/Corn-Meal/Skillet-Cornbread-and-Muffin-Mix.html
1 egg, beaten
3 tablespoons honey
3 tablespoons butter, melted
1.5 cups milk
1/2 pack of bacon
1/2 cup of cheddar cheese, shredded
* Fry half a pack of bacon to crispy and save the grease.
* Melt the butter while beating the egg.
* beat the butter, egg, and honey into the cold milk.
* Then, mix the cornmeal with the liquid ingredients.
*Finally, add the shredded cheese and bacon
* Let the batter sit for 30-45 minutes. The texture changes a
bit as the batter thickens.
*Preheat oven to 375.
*Add bacon grease to skillet and insert skillet in oven while preheating
*Once oven preheats carefully remove skillet and pour in the batter.
* Put skillet back in oven.
*Cooking time will vary. Check at 15 minutes and then at
5 minute intervals until the center is firm and a toothpick removes clean
when inserted. Cornbread should look golden and will have pulled away from the sides slightly.
